How to Make Two Styles of Bubble Tea

Assam bubble milk tea - Modern Stove-top style



Implements:

1.Saucepan

2.Filter

3.Cups

4.Stove


Ingredients:

30g tapioca pearl

200g water

200g milk

13g Assam black tea

Brown sugar or honey



Recipe:

Using the directions bellow, prepare the pearls.

Bring water to a boil

Reduce the temperature to a simmer

Put in the black tea and simmer for 30 seconds

Add milk - continue to cook for 30 seconds (Do not let the pan boil, or the milk may scald.)

Remove from heat

Add sugar or honey to taste

Using the filter, evenly pour the milk tea into the cups

Finally, add the pearls into the cups



How to cook dry style pearls:

Bring a generous amount (at least 3 inches above the pearls) of water to a boil. Add pearls, and brown sugar to taste. Cook for 5 minutes, or until the pearls have an al dente texture. Please take care not to overcook the pearls. The dry pearls will change from gray and dull, to black and shiny. Once desired texture has been reached, immediately remove the pearls from water and allow to cool.



 

Red Jade bubble milk tea - shake style (泡沫紅茶式)


Bubble Tea
Josh, though feeling slightly embarrassed, did a great job shaking up the tea!

Implement:

1.Shaker Bottle (500 ml)

2.Filter

3.200 ml Teapot (glass or ceramic)

4. 400ml+ pitcher.

5.Cups


Bubble Tea

Ingredients:

30g tapioca pearl

200g water

200g milk

13g Red Jade black tea

Brown sugar or honey

Ice cube



Recipe:

Using the directions below, prepare the pearls.

Using the teapot, brew the Red Jade with boiling water for 2 minutes.

Brew for two rounds, and pour off into the pitcher.

Inside the shaker bottle, combine the brewed tea, five or six ice cubes, and honey to taste.

Shake for 30 seconds, or until a layer of foam forms.

Add pearls into the cups

Finally, gently pour the shaken tea into the cups. Be careful not to destroy the layer of foam.
